Bakery Flour
Bookings of bakery flour were limited
last week. Pan bread and spring grade
flour prices were raised. Price adjustments in soft flour were minor.
One miller noted spring grade users
were more "engaged" last week than
buyers of other grades, but even this business barely matched last week's spring
wheat grind. Other millers said most of
the activity they saw last week comprised
fill-ins. There was additional inquiry for
October-December pricing, particularly
for soft flour and spring grades, but this
produced little new business.
The relatively quiet tone to the market
was partly due to the attention directed by
millers and bakers to the U.S. Department
of Agriculture's July Crop Production and
World Agricultural Supply and Demand
Estimates reports issued July 11. July forecasts for U.S. and world wheat supply and
demand in 2019-20 were unexpectedly
bullish and rallied wheat futures, to the
chagrin of bakers who had been poised to
add to their fourth-quarter coverage.
Also off-putting to bread bakers were
wide carrying charges in Kansas City
and Minneapolis wheat futures.
Cash wheat markets were choppy.
Harvest pressure was beginning to
mount in the case of the hard red winter wheat basis, but this pressure was
tempered, at least for middle-protein
and high-protein supply, by insistent if
not broad-based mill demand. The cash
spring wheat market featured sometimes
wide day-to-day basis swings. Still, the

Family Flour
Sales of national and regional brands of
family flour were seasonally sluggish last
week. Carlot list prices were unchanged.
Summer doldrums prevailed. Home
bakers won't boost demand until the
approach of the 2019-20 school year and
the key fall baking season. In the meantime, manufacturers and buyers began
to discuss trade activation programs for
the fall.
Most private label flour buyers earlier
covered their needs through September. MBN

Semolina
Bookings of semolina, granulars and
durum flour were light last week. Prices
were unchanged.
The price of choice milling hard amber durum as quoted at the Chicago rail
gateway for delivery beyond remained
a nominal $7.40 a bu. The Minneapolis
price remained a nominal $7.10 a bu.
Millers estimated July-September

spring wheat basis was well below yearago levels, and spring grade users have
proved willing to extend coverage of the
basis component of flour contracts.
Millers estimated October-December
pan bread flour coverage at 60% to 70%.
There was a range in spring grade coverage estimates from as low as 45% to as
high as 70%. Soft flour coverage was estimated between 40% and 50%.
Mill grind last week was up to six

fourth-quarter coverage was estimated
at about 80%. There were wide carrying
charges to the fourth quarter of 2019 and
the first quarter of 2020 from the nearby,
and January-March offers were based on
cash durum prices above $8 a bu. Most
pasta manufacturers held back from extending contract balances into 2020 in
the hope prices pull back once the northern Plains harvest begins.
The harvest of the small Arizona durum crop was completed. Most Arizona
durum was earmarked for export or for
use by regional mills.
The North Dakota durum crop was 47%
headed by July 7 compared with 50% as
the recent five-year average for the date,
according to the U.S. Department of Agriculture office in that state. The U.S.D.A.
rated the North Dakota crop at 74% good
to excellent, 24% fair and 2% poor. Montana durum was 25% headed by July 7
compared with 42% as the average progress for the date. The U.S.D.A. rated the
Montana crop at 41% good to excellent
(40% week earlier), 54% fair and 5% poor.
The U.S.D.A. forecast this year's durum crop at 58 million bus, down 25%
from 77 million bus in 2018. The U.S.D.A.
forecast the carryover of durum on June
1, 2020, at 60 million bus, up 5 million
