Bakery Flour
Bookings of bakery flour expanded
last week as individual bakers covered
outstanding components to move JulySeptember ownership toward completion. Flour price adjustments were mixed
with wheat futures declining in Chicago
and Kansas City but advancing in Minneapolis. Cash wheat premiums weakened
in Kansas City but were firm in Minneapolis. Soft red mill bids were strong.
In good measure, the calendar was
responsible for the increased business,
which was not shared equally by all millers. Some bakers who had been holding
back on completing coverage for the
third quarter decided to wait no longer
with June drawing to a close. The week's
contracting involved all grades.
Other millers indicated their bakers
were comfortable with their coverage, at
least for a while, and were directing their
attention to new crop developments,
which included a late-week expansion in
the lagging winter wheat harvest.
Early harvest results, mostly from
Texas and Oklahoma, seemed to confirm
expectations for a hard red winter wheat
crop with average protein well below a
year ago, when the 2018 hard red winter
wheat crop had average protein of about
12.3%. A lower-protein crop, such as
those harvested in 2016 and 2017, would
require millers and bakers to work closely together to manufacture and employ
blends incorporating a greater percentage of flour milled from spring wheat.

Family Flour
Sales of national and regional brands
of family flour were seasonally sluggish.
Carlot list prices were unchanged.
No expansion in sales and orders were
expected until the approach of the 201920 school year and the fall baking season.
Most private label flour buyers were

Semolina
Bookings of semolina, granulars and
durum flour were limited last week.
Price adjustments were minor.
There were two constraints on new
business. First, most pasta manufacturers were comfortably covered through
the end of 2019. July-September semolina coverage was estimated at about 90%,
and fourth-quarter coverage was about
80%. Second, there was a wide carry
in the cash durum market equating to
about 60c or 70c a bu for January-March,
and pasta manufacturers weren't willing
to book semolina that incorporated such
a wide carry in the price. They were content to await new crop developments before committing to ownership into 2020.

flour coverage was about 80% for pan
bread flour and soft flour and 75% for
spring grades. Fourth-quarter coverage
ranged from 25% to 50% for pan bread
flour and soft flour and from 20% to 40%
for spring grades.
Mill grind averaged about 5½ days
across most of the country. MBN

amber durum as quoted at the Chicago rail
gateway for delivery beyond remained a
nominal $7.40 a bu; the Minneapolis price
was pegged at about $7.10 a bu.
Statistics Canada on June 26 forecast
the area planted to durum in Canada
for harvest this year at 4,894,000 acres,
down 21% from 6,185,000 acres in 2018.
The U.S. Department of Agriculture
indicated the Arizona durum harvest
was 82% completed by June 23 compared
with 30% a week earlier and 63% as the
recent five-year average for the date.
The North Dakota crop was 53% jointed on June 23 compared with 61% as the
five-year average progress for the date.
The crop was rated 75% good to excellent, 24% fair and 1% poor. The Montana
crop was 10% in the boot stage compared
with 27% as the average for the date. The
U.S.D.A. rated the Montana crop at 41%
good to excellent, 53% fair and 6% poor,
a deterioration from the previous week
and compared with 46% good to excellent, 43% fair and 11% poor to very poor
as the recent five-year average rating.
The U.S.D.A. on June 28 estimated the
June 1 durum inventory, comprising the
2019 carryover, at 55.2 million bus, compared with the June 11 estimate at 61 million bus and compared with 34.9 million
bus in 2018. MBN
