DuPont enzyme system
extends shelf life of
baked
foods
DuPont Nutrition & Health, New Century, Kas., has intro-

duced the PowerFresh 9705 enzyme system that addresses
freshness and resilience throughout the shelf life of bakery
products. Tests have shown the enzyme system is effective
in white pan bread up to 35 days.
Benefits include improving product softness and eating quality, maintaining product integrity across shelf life,
increasing processing tolerance
and consistency, reducing costs
and waste, expanding geographic reach and exploring different
distribution models, according

Ingredion launches
organic pea protein
ingredient

Ingredion, Inc., Westchester, Ill., has introduced
Vitessence Pulse 1803 organic pea protein isolate for use
in applications such as nutrition and sports bars, alternative meat and alternative dairy products, powdered
and ready-to-drink beverages, and baked foods and baking mixes. The ingredient is characterized by a smooth,
creamy texture and a flavor low in raw and green notes,
according to Ingredion.
The ingredient contains a minimum of 80% protein.
Quality Assurance International, San Diego, has certified
it as organic through the U.S. Department of Agriculture's National Organic Program. Vitessence Pulse 1803
may replace allergens such as dairy and eggs, and it supports gluten-free claims.
"Vitessence Pulse 1803 organic pea protein isolate is
not only an important step forward for Ingredion's new
growth platform but underscores our commitment to
accelerating plant-based protein production globally,"

ADM acquires second
citrus flavor company

Archer Daniels Midland Co., Chicago, has agreed to
acquire the Ziegler Group, a provider of natural citrus
flavor ingredients, ADM said March 15. Founded in 1963
and based in Aufsess, Germany, the Ziegler Group uses
proprietary cold concentration technologies to produce
natural citrus oils, extracts, concentrates and compounds
for flavor, food and beverage industry customers in Europe, the United States and Japan.
The announcement came two weeks after ADM said it
had completed the acquisition of Florida Chemical Co.,
Winter Haven, Fla., which specializes in citrus-based flavors and fragrances.
"Ziegler is highly respected as a cutting-edge leader in
citrus, and we're excited to welcome their outstanding
leadership and talent to ADM," said Vince Macciocchi,
president of ADM's Nutrition business. "The combination of Ziegler and Florida Chemical will immediately
position ADM for growth as a global leader in natural
citrus ingredients, with a complete range of innovative
citrus solutions and systems for food, beverage and fragrance customers."
The Ziegler Group transaction is expected to close in
the second quarter of 2019.

flavors for food and beverages, which is why the creation
of a global citrus platform offering a complete product
line for our customers is such an important capability for

Puratos' fruit fillings win
A.S.B. innovation award

The Vivafil range of preservative-free fruit fillings from
Puratos, Pennsauken, N.J., won an American Society of
Baking's 2019 Innovation Award
in the Health, Wellness and Nutrition category. Vivafil contains no
high-fructose corn syrup, no artificial colors and no artificial flavors. Vivafil comes in four flavors:
raspberry, wild blueberry, apricot
and apple. Potential applications
include cookies, layer cakes and
snack bars.
The entire range of Vivafil
flavors are produced at a Puratos facility in Pennsauken. The
combination of processing and
packaging capabilities, automated
cleaning systems and formulation expertise makes it possible to
produce the Vivafil fruit fillings
without the need to add preservatives, according to the
company.
